Huevos a la Mexicana


  • 8 eggs
  • For garnish 
  • 1 tsp Canola or olive oil
  • A pinch of salt and black pepper
  • Green Kick or Red Kick salsa


This quick and easy traditional Mexican breakfast is a tasty way to start the day.

Beat the eggs and sauté them in a medium heat skillet. Stir periodically, adding salt and pepper to taste. Add Green Kick or Red Kick salsa, stirring regularly until fluffy and cooked through. Serve with refried beans and corn tortillas if desired. Serves 4.
