Huevos Rancheros is a hearty breakfast of fried eggs (sunny side up or over easy) with Delicious Kicks salsa served over corn tortillas. Often accompanied by beans, this dish does not need to be confined to the breakfast table.
Huevos a la Mexicana
- 8 eggs
- For garnish
- 1 tsp Canola or olive oil
- A pinch of salt and black pepper
- Green Kick or Red Kick salsa
Chilaquiles are a classic Mexican dish that may be served at any time of day, though most people know it as a breakfast dish. If you have not had the good fortune to enjoy this wonderful anytime comfort food, this recipe is for you.
Chilaquiles are made with fried strips of tortillas (or with pre-made tortilla chips as a shortcut), eggs, meat, beans in any combination, and topped with a generous portion of Green Kick or Red Kick salsa.
Chicken and Black Bean Chilaquiles with Salsa Verde (Green Kick) or Salsa Roja (Red Kick) Hot or Mild, as you prefer.
Mexican Hot Wings with Roasted Salsa
Arrange chicken wings on a rack on a foil-lined rimmed baking sheet. Bake in a 400°F (200°C) oven for 20 minutes. Turn and bake until juices run clear when the chicken is pierced (about 15 minutes.) Bake Broil wings 1 to 2 minutes per side, turning once, until crisp and browned. Serve with Red Kick or Green Kick salsa. Delicious!
